First snow just fell over our mountains and I couldn’t resist, I had to share this new wonderful dessert with you guys! Nothing really special about it, a lime and yogurt base with a beautiful vanilla cremeux rose on top, crème fraîche, oxalis and icing sugar. But the best part on terms of design is 100% the fake ice snowflake on top. It’s made by using isomalt sugar to get a thin layer of the shape you like. You can let it slowly melt in your oven at 130C and slowly add more isomalt to cover the parts left empty when it melts, or using a kitchen torch on super low flame and repeat the same process by hand. Which one is best? I really can’t tell. I guess it’s all about practice. Let me know which one works best for you! 😉
